
This is one of those meals whose flavors screams summer! I enjoy it because I love the taste of chicken from the grill, the marinade couldn’t be easier, and the salad and vinaigrette comes together in the time it takes the grill to heat up. Pretty low effort, high reward. And that is the type of summer dinner I’m on board for. It’s also a great meal to make when hosting a summer get-together, mainly because of the flavors. It tastes like you know what you’re doing in the kitchen, and isn’t that what we all want?
Balsamic Marinated Chicken with Strawberry Feta Salad
Ingredients
- 2 pounds boneless, skinless chicken breast or thigh
- kosher salt, freshly ground black pepper, and garlic powder to taste
- 1 ½ cups balsamic vinegar
- 16 ounces mixed greens lettuce
- 1 pint strawberries, quartered
- ½ large cucumber, diced
- ½ red onion, sliced thin
- 1 ½ cups pecans, chopped
- ¾ cups feta cheese
Almond-Red Wine Vinaigrette
- ¼ cup red wine vinegar
- ¾ cup olive or avocado oil
- 1 tablespoon honey
- 1 tablespoon dijion mustard
- ½ teaspoon almond extract
- salt and pepper to taste
Instructions
- Season chicken with kosher salt, freshly ground black pepper, and garlic powder, add to a bowl with balsamic vinegar. Allow to marinate in the fridge for about 30 minutes
- Meanwhile, prepare your salad. In a large bowl add your mixed greens, season with salt to taste. Add strawberries, cucumbers, red onion, pecans, and feta cheese.
- Heat up your outdoor BBQ, and grill your balsamic marinated chicken until fully cooked. Allow to rest under a tent of foil.
- Meanwhile, begin on your vinaigrette dressing, by combining all ingredients and whisk vigorously until fully emulsified.
